FYI, there are different  types of Spices mixes used according to type of food / Regions in India, but following Garam Masala Mix is prepared and used in daily cooking.; which is generally low spicy and oily but gives traditional taste and aroma to your Indian curry.

Prepare Garam Masala as per recipes below and store in dry seal-tight bottle (shelf life- about 4-5 moths) for future cooking usage.  First understand what Indian spice Box contains and then recipe of spices mix (Garam Masala, chaat masala and Chai Masala) by mixing these ingredients in proper proportion.

~ Pani-Puri Recipe: How to Make Crispy ‘Puri’

Simple Pani Puri dish (also called Gol Gappa) but difficult to make crispy Puri (hollow spherical shaped fried bread ), that’s the biggest challenge with this dish! See collection of 3 Secret Recipes to make “Puri for mouth-watering Pani-Puri dish at Home! 😀

Many Indians buy ready-made Puris from shop and make Pani-Puri dish at home. But, such Puris may or may not be fresh. So, they generally prefer to make Puris at home. Find 3 different recipes below along with some important points to note. BTW, making Pani (Water with herbal ingredients and typical spices) is simple now after availability of many ready-made “Pani-Puri Masala” (Spice) in the market.

Important things to note:

  • Oil temperature should be proper (low and not  medium or high ) for frying puris
  • Puri should be properly closed at appropriate time using wet towel (except recipe showed in 1st video)
  • Remember proper Sequencing of ingredients/when to add oil , etc for making Puri Dough
  • Even if your Puri remain soft after frying, try to use oven (200 degree F/93 C for 20 min as mentioned in first recipe)
  • Ingredients of Puri Dough making is slightly different in each recipes, try which is best suitable

~ Karma Kitchen, USA : A unique Restaurant where you pay $0 (Zero) bill

One of its kind restaurant  where you get $ 0 bill with a note:  “Your meal was a gift from someone who came before you. To keep the chain of gifts alive, we invite you to pay it forward for those dine after you”. So, technically your bill is already paid by some unknown visitor before and you have to pay for future unknown guest, just out of Generosity!! Also, there is no Price on Menu card, you can order what you want and you get “$0” (zero) dollar bill. Then you can pay what you feel is right value (in terms of money) for your food!  Another interesting thing is that food is prepared and served by volunteers who gives service for FREE (without any salary)! So, imagine unique scene where waiter/staff do not get salary and customer gets zero dollar bill  😀

Viral and Pavi Mehta, American-Indian couple, initiated this idea at Taste of Himalayas Restaurant,  Berkley , California. This Karma concept meal is served on Sunday. As their  website  says ‘it’s a volunteer-driven experiment in generosity’. Initiative is to spread Generosity and Togetherness among people!
